You may not think the do-it-yourself movement applies to you. Not so. Making some of your own staples – and a few luxuries, like chocolate hazelnut paste or better-than-balsamic maple vinegar – is possible, and it’s gratifying.
What follows is small kitchen projects that any cook can tackle. These are simple, seasonless and clear improvements on the store-bought versions. Nothing here requires special equipment; no canning or freezing is involved. It’s not necessary for you to understand lactic fermentation, or to learn the difference between bacon and pancetta.
You won’t get more local than your own kitchen; we will use it and produce results that will accompany artisanal ham, or a batch of fresh cheese with a taste that cannot be bought.
