I think there needs to be a good lemonade as a part of your summer entertaining, sipping strategy. Especially during the long hot summers in the south. It’s really the most efficient way to cool off after you spent a long hot day outside. The best part is that it only takes a few minutes to pull together a delicious batch of this homemade lemonade.

I have been cooking for quite a few years now, and until this last year, I never really delved into drinks. Sure, there is a cocktail here and there but never just a simple lemonade recipe that is diabetic, keto, low-carb, Atkins, Banting, Vegan, and Sugar-Free Friendly.

I feel that not only do the mangos add a pleasant, sweet flavor to this recipe, but they also give it an amazing color that makes this drink better than the average lemonade. You can, if serving only to adults spike this drink with rum to make a spiced cocktail.

Yes, if it’s something you make at home. too many store-purchased powdered sugar-free lemonades contain a whole host of artificial flavors, colors, and sweeteners without any real nutritional benefits. Homemade mango lemonade has a lot of benefits, you can pronounce the ingredients and it is wicked ways to make it.

Why is it so easy to make? To make this lemonade from scratch, you just need to prepare the two main ingredients. The mangos and the lemons. When using a blender, takes all the hard work out of it. 

I do recommend using freshly squeezed lemon juice rather than the store-purchased stuff. While it will take a little more elbow grease, your final product will be way more worth it. 

When you purchase your lemons at the store, I recommend buying 2 or 3 more than you think you will need. If you end up with extra lemon or two, you can use them to garnish. If you end up with less than the recommended 1 1/2 cups of lemon juice, you should slightly decrease all of the other ingredients in the recipe proportionally, however, I would just suggest buying more lemons.

When you are juicing your lemons, It’s important to puree the mangos. When you use your food processor or blender it will give the fresh mango a smooth puree consistency. I feel it’s very important to ensure that this puree is as smooth as can be. If it is not, it leads to the final texture problems in the end finish.

Ingredients:

  • 8 oz Fresh Mangos (about 2 cups)
  • 2 1/2 tablespoon granulated stevia blend sweetener
  • 7 cups water + 1 cup to add in the mango puree
  • 1 1/2 cups freshly-squeezed lemon juice (about 7-10 medium to large lemons)

Instructions:

  1. Using your food processor, blend the mangos until they reach a smooth puree-like consistency. Then, add 1 cup of water and blend until combined.
  2. In a large pitcher combine 7 cups of water and the sweetener. Stir until the sweetener starts to dissolve.
  3. Next, using a fine sieve or strainer, strain the mango juice directly into the pitcher with the water and sweetener mixture. Stir until well combined. next string the lemon juice and stir well to ensure any of the remaining sweeteners is dissolved. Taste and adjust the sweetness or water quantity until desired taste.

Note: 

This recipe is designed to only be lightly sweet, this allows you the flexibility to adjust your level of sweetness. Once you use the finished recipe, you can adjust it as you see fit. More water can be added to dilute if the lemonade is too strong.
