Georgia Peach-Maple Glazed Ham

I have always loved peaches. As a child we would travel the old highway in Willard all the way up to Brigham City Utah and buy fruit from the vendors that have long dried up to the pressure of the Mega-Mart retailers that now dot the Wasatch Front range of the Rocky Mountains. We now live in Middle Georgia. There are far more agrotoursims locations out here and, they feature peaches. One of our favorites is Dickey Farms. It’s a little bit of a drive from where we live in North Macon, however it is so worth it. There are so many products you can get there that feature the state fruit, we have the abundance of riches here. Now, in addition to being in the south, things can be planted and harvested a little earlier than what you can expect in the North.

I also love ham. Lovely smoked ham. This is one of my favorite recipes of all time. This is perfect for the Holiday’s and also for just a weekend with the family.

Georgia Peach-Maple Glazed Ham

Equipment

  • 1 Shallow Roasting Pan
  • 1 Small Sauce Pan
  • 1 Length Aluminum Foil

Ingredients
  

  • 10 LBS Fully Cooked Ham
  • 2 1/4 Cups Peach Preserves
  • 1/3 Cup Maple Syrup
  • 1/3 Cup Orange Juice
  • 2 tbsp Ground ancho-chile pepper

Instructions
 

  • Start your oven by preheating to 325 degrees F. In the shallow roasting pan, place your hame on a rack. Cover the ham with aluminum foil and and bake for 2 and 1/4 to 2 and 1/2 hours or until your thermometer reads 135 F.
  • While the ham cooks, in your small saucepan start to combine the syrup, orange juice, peach preserves and the chili pepper until well incorporated. Set aside 3/4 cup of this mixture for glazing the ham.
  • When the ham is at 135 F, remove it from the oven and start to brush the hame with the 3/4 reserved glaze. Once the ham is well covered, return the ham to the oven and allow to cook for an additional 20 min or until the glaze has set and the internal temperature has risen to 145 F. Glaze one fore time with the reserved glaze.
  • The Glaze that was not reserved, return to medium heat and allow that mixture to come to a boil, stir occasionally. Allow to cook until the sauce has started to slightly thicken. This will take about 2 to 3 min. Place in a serving dish and serve with the ham.

Notes

You can make your own smoked ham. However, for additional convenience you can get yourself a honey baked ham or spiral sliced ham and serve this with the bread of your choice and it makes wonderful sandwiches.
