7 Ways to Grilling Valhalla

Grilling has got to be the world’s oldest and most basic cooking method, it’s practiced in virtually every culture and culture on planet earth.

Today, we have so many decisions, from what grill and gadgets to buy, to what fuel and cooking method is best. 

And, let us not forget about the rubs, marinades, bastes, glazes and the other way to flavor and transform your simple grilled item into a gem.

Finally, there is the knowledge of how to manage your grill and cook to the desired temperature.

We have got you covered. However, I think it’s safe to say there is a lot more to grilling than just chucking that T-bone on the grill.

Step 1: Choice of Grill

It’s your money and the question we all ask is “What grill should I get?” There isn’t one answer that fits all. What type of person are you? If you value convenience, I would recommend a gas or a pellet grill or smoker. If you are a person that loves grilling as an event, then I think you need a grill that is fueled by wood or charcoal. Price and the available space you have should also factor into your final decision. What has served my clients the best is to buy more grill than you think you might need.

Step 2: Fuel

It all started with the classic Weber kettle grill, there has been a debate to what fuel is the best: charcoal or gas. Then of course, if you are a pureist there is wood. When you master all three of these fuels and then you will be able to grill anything on the planet.

Step 3: Tools

A grill master needs the right tools to complete all the tasks. Here are what I recommend as must-haves:

  • Tongs these make it easy to turn your food, cleaning and oiling the grate.
  • Meat Rake these make it easy to shred smoked pork butt and anything else on a smoker.
  • Grill Spatula for turning things like burgers, fish and the like.
  • Grill Light it is essential if you are a grill guy who like to grill early morning or late-night. 
  • Grill Gloves Leather, Kevlar or Aramid are the best. You have to keep your hands and forearms safe from the heat.
  • Meat Thermometer, remote or an instant-read are fine, cooking to temperature is the best way to get a consistent cook.
  • Chimney Starter: My preferred way to get charcoal to temperature fast, so you can start grilling.
  • Wire Grill Brush for cleaning your grill grate. This is something you should do before you place your food on and after it comes off the grill.

Step 4: Food Needs Flavor

Since the dawn of time, our predecessors have sought ways to enhance the flavor of their grilled food by using seasonings, herbs, and spices. Needless to say Salt and pepper are must-haves, however, you can also develop very complex flavors with a spice rub, marinade or glaze.

Step 5: Grilling Method

Direct grilling – this is when you cook directly over the fire and it’s the simplest, most common way to grill. However, there are other methods that are better for some types of foods. Direct grilling works best for tender, thinner, fast-cooking foods like burgers, steaks, etc. 

Indirect grilling – is used for larger cuts like whole chickens, pork shoulder and the king prime rib. Indirect grilling just means that you are cooking your next to and not directly cooking over the fuel. This is generally done with the lid closed. Yes, Smoking is an example of indirect cooking.

There is a third and that is a spit-roasting. Grilling on a rotisserie. We generally see this application on protein like whole chickens, ducks, pork loin roasts, and prime rib.

Step 6: Light it Up

Lighting a grill is very easy, even if you are using charcoal. Charcoal takes about 20 minutes to preheat if you are using a chimney starter and about 15 minutes on a gas grill. Always follow your grills manufacturer’s instructions and always make sure you have the lid on a gas grill open before you turn on the gas. Protect those eyebrows. 

Step 7: All Together Now

Alright, you now have chosen your grill, the source of fuel you prefer, gathered your tools, seasoned your food, and selected a grilling method and know-how to light the grill, the last step is to get grilling.

Almost any food you can imagine can be blessed with a hint of smoke or fire from the grill, from eggs in the morning to an amazing cobbler dessert. Your challenge is to think of ways to cook entire meals on your grill. It is so easy to do, and it keeps you out of the house and on the porch. A great starting point is to use a mix of dishes that you can grill ahead and those that you will just before service. This will allow you to be the talk of the town and a star at your next party.
