Pancetta Wrapped Asparagus

Ingredients
- 1 bunch of thick asparagus (about 15 spears; about 1 pound) trimmed
- 15 thin slices of pancetta
- vegetable oil
- salt and pepper to taste
Instructions
- Wrap each asparagus spear with a slice of pancetta tightly. Cover and refrigerate until rady to cook.
- Heat a large saute pan over a medium heat and coat slightly with oil and a little salt and pepper to taste.
- Cook the asparagus, turn on each side until it browns, and they turn just tender and the pancetta has turned crisp, this will take about 5 minutes. Transfer the asparagus to the plate that has been lined with paper towels to soak up any excess grease, and then transfer to a serving plate and serve hot.
