Ingredients
- 3 inch piece of ginger, unpeeled and sliced thin
- 6 cups water
- 6 green tea bags
- 1 1/2 cup loosely packed fresh mint leaves (plus more for service)
- 1/2 cup honey
- 1 tablespoons fresh squeezed lemon juice
- Ice for serving
Instructions
- In a medium saucepan combine the ginger, 6 cups water and bring to a boil over a high heat. Once it reaches a boil, remove from the heat and add the tea and the mint. Cover the post and allow the tea to steep until well flavored, this will take about 15 minutes.
- Strain the tea into a large pitcher or any other heatproof container; discard the tea bags, mint and the ginger slices. Chill the tea in the refrigerator for at least 1 hour.
- Just before you serve, add the honey and the lemon juice and stir to mix. Taste and adjust with additional honey if you would like a sweeter tea. Service is best in a tall glass over ice cubes and more mint leaves for garnish.
