Originally, this recipe of Chipotle Bacon Baked Beans was Vegetarian. The original is just fine on it’s own as it get’s it sweet, smoky and spicy flavor from the chipotle. However, we couldn’t have a side dish with out a little pork loving in it. We loved it to the tune of 1/2 pound of porkalishiousness. Yes, I just made that a word. So, now it has a Sweet, Smoky, Spicy and meaty flavor that will make this baked beans dish very memorable at your next gathering or Saturday night – what ever moves the needle for you. We just call this good eats!
Coca-Cola Chipotle Bacon Baked Beans

Ingredients
- 1 pound cannellini beans dry, soaked overnight
- 3 cups Coca-Cola
- 2 cups water
- 2 teaspoons smoked paprika
- 2 tablespoons concentrated tomato paste
- 1 diced spanish onion
- 1 teaspoon dijon mustard
- 1 tablespoon soy sauce
- 1/2 pound bacon, diced and cooked
- 2 whole canned chipotles in adobo sauce, minced
- 1 tablespoon adobo sauce from the chipotle chiles
- 1 teaspoon celery salt
- 1 bay leaf
- 1 clove of garlic, minced
- salt and pepper to taste
- 1 dash liquid smoke
Instructions
- Combine all of the ingredients in a slow cooker and mix well. Turn the slow cooker on low and allow to cook for 8 hours. Adjust liquid (water) if needed.
