The original version of this recipe came from Stillwater, Oklahoma original Eskimo Joe’s. Their Chipotle Bacon Burger is a 1/3 pound of ground chuck, seasoned and then grilled and topped with melted cheddar cheese, applewood smoked bacon and a smoky chipotle mayonnaise.
I try to respect the original and stay with applewood smoked bacon, ground chuck and highly suggest you use a cast iron skillet to achieve the same results!

Chipotle Spread

Ingredients
- 1 cup mayo
- 1 - 2 chipotle peppers in adobo (finely minced - 1 for less punch and 2 for more zest)
- 2 garlic cloves, minced
- 1/2 teaspoon lime juice
- kosher salt and black pepper
Instructions
- Mix in a bowl by combining the mayo, pepper, garlic, salt, pepper and lime juice completely.

Chipotle Bacon Burgers

Ingredients
- 1 pound ground beef
- 3 shakes Worcestershire sauce
- 1/2 teaspoon chipotle powder
- kosher salt and black pepper
- chipotle spread
- 2 strips thick cut bacon (cooked)
- 2 red onions, grilled
- greens, Romaine or Arugula
- 4 slices cheese, pepper jack or sharp cheddar
Instructions
- In a bowl mix your beef, pepper, salt, Worcestershire and the chipotle powder. Mix until well incorporated.
- Use the chipotle spread mixture.
- When your grill is hot, grill your patties until you reach your desired doneness and top with your cheese and allow to melt.
- While you allow your burgers melt the cheese, spread the chipotle spread over the hamburger buns.
- Assemble your burgers and add additional chipotle spread as needed.
