Touchdown Avocado Dip

  • 3oz tequila
  • 6 Ripe hass avocados (peeled, seeded and cut into chunks)
  • juice of 3 limes
  • 1 Medium sweet white onion (diced)
  • 2 Large ripe roma tomatoes (seeded, diced)
  • 2 Medium fresh jalapeno peppers (seeded, stemmed and diced)
  • 2 Cups mexican-blend (finely grated cheese)
  • 1/2 cup chopped cilantro leaves
  • 1 Pint sour cream
  • kosher salt and white pepper (to taste)
  • tortilla chips (for dipping)


Step 1
Mash the avocado chunks with the lime juice and salt in a large bowl, until just creamy. Add the diced onion, tomatoes, jalapenos and cilantro. Combine gently. Stir in the grated cheese and the tequila. Taste and adjust the seasoning with more salt if desired. In a 9x13 rectangular pan, spread this mixture smooth and even.
Step 2
Place your sour creme in a zipper bag and squeeze carefully to allow the air to escape before sealing. Squeeze all the sour cream to one corner and snip a tiny hole in the bottom of that corner. Now use this bag as you would a pastry bag and pipe a design. This could be a baseball diamond, soccer field or football field - use the plain white to represent the yard lines.
Step 3
Place tortilla chips in a serving basket.
