Spicy Sausage Soup

  • 3 bratwurst (spicy, or use hot italian sausage)
  • 1 yellow onion (sliced)
  • 5 Cloves garlic (chopped)
  • 3 green chiles (roasted and chopped)
  • 2 chipotle chiles (in adobo sauce, seeded and chopped)
  • 2 tomatillos (cut into quarters)
  • 1 Large tomato (chopped)
  • 1 tablespoon dried oregano
  • 1/2 teaspoon paprika
  • 2 15-oz cans garbanzo beans (drained and rinsed)
  • 3 Cups chicken stock
  • cilantro
  • 4 limes (cut in half)


Step 1
In a medium sized pot, boil the sausages until cooked through, about 10-15 minutes. Then add all the ingredients except for the cilantro into your slow cooker. Stir until all of the ingredients are mixed well. Cover and cook on low for 6-to-8 hours.
Step 2
Approximately 30 min before serving, remove the sausage from the slow cooker and cut into 1/4-inch slices. Return the sausage slices to the slow cooker, cover and allow to continue to cook until warm.
Step 3
Spoon into individual bowls and garnish if desired with cilantro and the juice of 1/2 of a lime.
