About this Recipe

This is a rustic and yet comforting Linguiça and White Bean Stew that is just the thing you will need to warm your family on any day. It is a wonderfully easy, delicious and very satisfying meal.

I actually was inspired when I was cooking for one of my clients and prepping my 30-minute meal. I raced to the grocery store and re-purchased the ingredients plus some additional vegetables and as a result, this gave this soup a more substantial stew-like consistency. This stew just yells out for some buttered, crusty sourdough or French Bread for dipping.

  • 1 (14 oz) Linguiça that is fully cooked, sliced
  • 2 tablespoons extra-virgin olive oil, plus additional as needed
  • 1 cup diced yellow onion
  • 2 tablespoons minced garlic
  • 2 medium carrots, peeled and coarsely chopped
  • 8 oz brown button mushrooms, quartered
  • 2 stalks celery, chopped
  • 4 cups (packed) coarsely chopped kale
  • 1 (28 oz) can crushed tomatoes
  • 2 cups low-sodium chicken broth
  • 2 cans small white beans, rinsed and drained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon kosher salt
  • fresh ground black pepper, to taste
  • shredded or shaved Parmesan, for garnish if wished

Step 1

Heat oil in your large Dutch oven over medium heat. Add the sliced Linguiça to the pan and allow to saute for 6 minutes, or until it has developed a nice brown color. Remove Linguiça to a plate and keep it warm with foil.

Step 2

Add the additional olive oil to the pot, if necessary. Add the onions, carrots, mushrooms, and celery. Cook and stir for several minutes until the vegetables have just started to soften. Add the kale and cook, stir for just two minutes to allow the kale to wilt. Add the tomatoes, chicken broth, white beans, thyme, marjoram, kosher salt, and ground pepper. Add the sausage back to the pot. Stir to combine.

Step 3

Increase the heat to allow the mixture to come to a boil. Cover, and reduce the heat to a low simmer and cook for 20-25 minutes. Serve with a garnish of Parmesan cheese if desired.
