Pancetta Wrapped Asparagus

  1. 1 bunch of thick asparagus (about 15 spears; about 1 pound) trimmed
  2. 15 thin slices of pancetta
  3. vegetable oil
  4. salt and pepper to taste
  1. Wrap each asparagus spear with a slice of pancetta tightly. Cover and refrigerate until rady to cook.
  2. Heat a large saute pan over a medium heat and coat slightly with oil and a little salt and pepper to taste.
  3. Cook the asparagus, turn on each side until it browns, and they turn just tender and the pancetta has turned crisp, this will take about 5 minutes. Transfer the asparagus to the plate that has been lined with paper towels to soak up any excess grease, and then transfer to a serving plate and serve hot.
