Do not be fooled by the cooking time of this Dutch Oven Mushroom Rice dish! The prep time only takes 10 minutes and you will be cooking in no time and if you do the one pot version you will be done within an hour. Once you make this once you will find that this is the perfect side dish for all of your meals, or it is a perfect lunch. Just serve it with a nice buttered crusty bread and you will find it amazing!

Ingredients
  1. 1 tablespoon olive oil
  2. 2 cloves garlic, minced fine
  3. 1 spanish onion, diced
  4. 1 pound cremini mushrooms, thinly sliced
  5. 2 teaspoons Worcestershire sauce
  6. 1/2 teaspoon dried thyme
  7. kosher salt and fresh ground black pepper, to taste
  8. 3/4 cup brown rice
  9. 1 1/2 cups vegetable broth
  10. 2 tablespoons unsalted butter
  11. 2 tablespoons chopped fresh chives
Instructions
  1. In a large Dutch Oven heat the olive oil over a medium heat. Add the garlic and onion. Cook and stir frequently until translucent, about 5 minutes.
  2. Stir in the mushrooms, Worcestershire, thyme and allow to cook until the mushrooms are tender and browned. This will take about 8 minutes. Season with kosher salt and black pepper, to taste.
  3. Stir in the brown rice and vegetable broth. Bring this to a boil; cover and reduce the heat to a simmer until the rice is cooked through, about 40-45 minutes. Stir in the butter until melted, about a minute or two.
  4. Serve immediately and garnish with chives as you desire.
