Ingredients
  1. 3 inch piece of ginger, unpeeled and sliced thin
  2. 6 cups water
  3. 6 green tea bags
  4. 1 1/2 cup loosely packed fresh mint leaves (plus more for service)
  5. 1/2 cup honey
  6. 1 tablespoons fresh squeezed lemon juice
  7. Ice for serving
Instructions
  1. In a medium saucepan combine the ginger, 6 cups water and bring to a boil over a high heat. Once it reaches a boil, remove from the heat and add the tea and the mint. Cover the post and allow the tea to steep until well flavored, this will take about 15 minutes.
  2. Strain the tea into a large pitcher or any other heatproof container; discard the tea bags, mint and the ginger slices. Chill the tea in the refrigerator for at least 1 hour.
  3. Just before you serve, add the honey and the lemon juice and stir to mix. Taste and adjust with additional honey if you would like a sweeter tea. Service is best in a tall glass over ice cubes and more mint leaves for garnish.
