This Sloppy Joe Mac and Cheese is one of my very first recipes for my upcoming food truck. It is an easy family-friendly meal that can be made in less than 30 minutes for the basic, pure comfort food that our entire family will go CRAZY for! With just a little modification and the addition of a Parmesan Texas Cheese Toast you now have the perfect bundle of comfort that is perfect for that restaurant that has wheels!

Sloppy Joe Sauce
  1. 3 cups tomato sauce
  2. 8 tablespoons brown sugar
  3. 4 tablespoons tomato paste
  4. 8 teaspoons Worcestershire sauce
  5. 2 teaspoons kosher salt
  6. 1 teaspoon ground black pepper
Pasta and the Remaining Ingredients
  1. 8 cups dry elbo macaroni or similar pasta
  2. 4 tablespoons olive oil
  3. 3 cups diced onion
  4. 2 green bell peppers, diced
  5. 10 garlic cloves, minced
  6. 2 teaspoons paprika
  7. 2 teaspoons apple cider vinegar
  8. 2 pounds ground beef
  9. 4 cups shredded sharp cheddar cheese
Sauce
  1. In a large mixing bowl, mix all the sauce ingredients completely and set aside.
Assembling the Dish
  1. Cook the pasta in a large pot of salted boiling water, cook for 8 minutes and then drain.
  2. Heat the olive oil in a large skillet over a medium heat. Add the diced onion, green pepper and garlic. Saute for about 5 minutes or until the garlic is fragrant and the vegetables have started to soften.
  3. Add the ground beef to the same skillet, and cook. Break the meat up with a spoon until it cooks completely. This will take about 10 minutes.
  4. Add the sauce mixture to the skillet.
  5. Add the drained pasta, and cover with the cheese. Turn the heat down to a medium-low, stir the mixture until it has combined completely and the cheese has melted.
  6. Serve immediately!
Notes
  1. This makes an excellent Grilled Cheese Sandwich and is a perfect recipe for a food truck event dinner!
