Ingredients
  1. 2 1/2 Quarts water
  2. 1 Pound fresh black cherries (pitted, or two 10 oz bags frozen pitted black cherries, thawed)
  3. 1 1/4 Cups sugar
  4. 1/4 cup fresh lemon juice
  5. 3 whole star anise
  6. 1/2 vanilla bean (split and scraped)
  7. 16 green-tea bags
Instructions
  1. In a large sauce pan bring the water to a boil. Add the cherries, sugar, lemon juice, star anise and the vanilla with its seeds. Allow this to simmer over a low heat for 15 minutes, crush the the cherries against the side of the pan with a wooden spoon. Remove the pot from the heat, cover and allow to steep for 1 hour.
  2. Strain this mixture through a fine mesh sieve into a clean saucepan, pressing the solids to extract all the liquid. Discard the solids. Bring the cherry juice to a boil over a moderate heat. Remove this from the heat, and add the tea bags and allow to steep again for 5 minutes. Discard the tea bags and allow the tea to cool to room temperature. Transfer this cherry tea to a large picture and refrigerate until cold or for up to 2 days. Serve the tea over ice, garnish with mint sprigs if desired.
