Originally, this recipe of Chipotle Bacon Baked Beans was Vegetarian. The original is just fine on it’s own as it get’s it sweet, smoky and spicy flavor from the chipotle.  However, we couldn’t have a side dish with out a little pork loving in it.  We loved it to the tune of 1/2 pound of porkalishiousness. Yes, I just made that a word. So, now it has a Sweet, Smoky, Spicy and meaty flavor that will make this baked beans dish very memorable at your next gathering or Saturday night – what ever moves the needle for you. We just call this good eats!

Ingredients
  1. 1 pound cannellini beans dry, soaked overnight
  2. 3 cups Coca-Cola
  3. 2 cups water
  4. 2 teaspoons smoked paprika
  5. 2 tablespoons concentrated tomato paste
  6. 1 diced spanish onion
  7. 1 teaspoon dijon mustard
  8. 1 tablespoon soy sauce
  9. 1/2 pound bacon, diced and cooked
  10. 2 whole canned chipotles in adobo sauce, minced
  11. 1 tablespoon adobo sauce from the chipotle chiles
  12. 1 teaspoon celery salt
  13. 1 bay leaf
  14. 1 clove of garlic, minced
  15. salt and pepper to taste
  16. 1 dash liquid smoke
Instructions
  1. Combine all of the ingredients in a slow cooker and mix well. Turn the slow cooker on low and allow to cook for 8 hours. Adjust liquid (water) if needed.
