Ingredients
  1. 4 chicken breasts
  2. 2 tablespoons flour
  3. 2 tablespoons Parmesan cheese, grated
  4. 1/2 teaspoon kosher salt, divided
  5. 1/4 teaspoon pepper
  6. 1 tablespoon olive oil, divided
  7. 2 cup onion, diced
  8. 2 garlic cloves, minced fine
  9. 2 cup mushrooms, slice
  10. 1/2 teaspoon basil
  11. 2 tablespoons of a dry white wine
  12. 2 tablespoons water
Instructions
  1. In a mixing bowl or on a paper plate, combine the flour, parmesan cheese, and 1/4 teaspoon salt and pepper.
  2. Begin the dredging process of your chicken by coating each chicken in the flour mixture, ensuring that both sides are completely coated, and reserve any remaining flour.
  3. In a large skillet, begin to heat 1 1/2 teaspoons oil over a medium fire; add onions and garlic and saute until the onions are soft.
  4. Add the mushrooms, basil and the remaining 1/4 teaspoon salt and allow to saute until the mushrooms turn tender, this will take about 5 minutes.
  5. Transfer this mixture to a plate and set aside.
  6. Using your same large skillet, heat the remaining 1 1/2 teaspoon oil; add the chicken and cook. Cook until the chicken has turned a light brown on each side. 3 to 4 minutes on each side.
  7. Stir in the reserved flour, and allow to cook to take the raw taste from the flour. Gradually add wine and water and continue to stir the mixture until it reaches a boil.
  8. Return the mushroom mixture to the pan and allow it to cook until it has heated through.
Notes
  1. You will need to increase cooking time if you use a bone in chicken breasts. I usually increase the times when the chicken is in the sauce to allow the chicken to baste in the Mushroom Wine Sauce.
