Ingredients
  1. 1 pound black Angus filet Mignon, cut into 1 inch cubes
  2. 1/2 pound Rib Eye Steak, well marbled cut, cut into 1 inch cubes
  3. 1 tablespoon season salt
  4. 1/4 teaspoon kosher salt
  5. 1/2 teaspoon ground black pepper
  6. 2 tablespoons unsalted butter, melted
  7. 4 buns, split
  8. Sweet Hot Mustard (to taste)
  9. Mayonnaise (to taste)
  10. 8 spicy pickle slices
  11. 1 1/2 cups butter lettuce, torn
  12. 2 Heirloom tomatoes, sliced thin (optional)
  13. 8 slices of cooked thick cut bacon
Instructions
  1. Bring the meat to a room temperature. In a food grinder or food processor add the meat and grind.
  2. In a large bowl add the ground meat and season with the season salt, salt and pepper. Mix this well and form into four patties.
  3. Baste the burger with the melted butter and place on the grill or a heavy cast iron skillet and cook over medium heat. Turn frequently until it reaches a medium temperature or it has turned a pale pink on the inside. This should take about 6 minutes per side.
  4. Remove the burgers from the grill, cover with aluminium foil for at least 5 minutes. Place each patty on the bottom roll and top with hot sweet mustard, mayo, pickle, butter lettuce, bacon and two slices of tomato and then top with the roll top and enjoy!
Notes
  1. Optional: Add a Slice of Cheese and or a Grilled Egg
