Beef stew has found a place in my heart as one of the best comfort foods ever, especially during the fall and winter months. Nothing sits better with me on a Sunday than a big bowl of beef stew, football on the TV and the fire on. To top off, this is an easy crockpot or slow cooker recipe that allows you to put it in and let it simmer for hours. This simmer will fill your house full of fragrant love!

Ingredients
  1. 4 Pounds bottom round (trim well, and cut into 2)
  2. 1 cup all-purpose flour
  3. 1/3 cup olive oil (more if needed)
  4. 2 Large onions (diced, yield 2 cups)
  5. 1 6-oz can tomato paste
  6. 1 cup dry red wine
  7. 1 Pound potatoes (cut into 2)
  8. 1/2 Pound baby carrots (about 2 cups)
  9. 2 Cups beef broth (low salt)
  10. 1 tablespoon kosher salt
  11. 1 teaspoon dried thyme leaves
  12. 1 cup frozen peas (thawed)
  13. 1 teaspoon fresh ground pepper
Instructions
  1. Place the flour in a 9x13 baking dish and coat the beef in the flour. Tossing to remove excess flour. In a large skillet over medium-high heat place a few tablespoons of oil and allow to come to temp. Brown the meat in patches, adding oil as needed. Transfer this meet to your slow cooker (4 to 6 quart in size)
  2. In the same skillet, add the onions and cook over medium heat until they turn tender. This will take about 10 minutes. Stir in the tomato paste and coat the onions; and allow to develop a deeper red color. This should take about 2-3 minutes and then transfer to the slow cooker.
  3. Deglaze the skillet with the wine and scrape any of the browned bits and place in the slow cooker. Then in the slow cooker stir in the potatoes, carrots, broth, salt, pepper, thyme and bay leaf.
  4. Cover the slow cooker and allow to cook on the low heat setting for 7 1/2 hours, or if you need a faster cook you can cook on high for 4 hours. Once this has cooked, add the peas and allow them to heat through and serve.
