What? A chain restaurant’s recipe for gravy? Brian what in heck are you doing? These are all questions that I have had to ask myself when I decided to share this recipe with you. One of my favorite chicken fast food joints is Popeye’s, and based on their recent expansion activities and the lines at the franchises – I am not alone.

Todd Wilbur had a TV chow on CMT called Top Secret Recipes and he devised a recipe that was very similar to this zesty gravy recipe. I have made slight adjustments to the steps, however the recipe remains basically the same as Todd’s.

This is one of our families favorite gravy recipes.

Popeye's Cajun Gravy Recipe

Ingredients
  1. 1 1/2 Tablespoons vegetable oil
  2. 2 chicken gizzards
  3. 2 1/2 Tablespoons minced green bell peppers
  4. 1/4 cup ground beef
  5. 1/4 cup ground pork, plus 2 tablespoons
  6. 2 Cups water
  7. 14 Ounces beef broth
  8. 2 Tablespoons cornstarch
  9. 1 tablespoon flour
  10. 2 Teaspoons milk
  11. 2 Teaspoons distilled white vinegar
  12. 1 teaspoon sugar
  13. 1 teaspoon kosher salt
  14. 1/2 teaspoon fresh coarse ground black pepper
  15. 1/4 teaspoon cayenne pepper
  16. 1/4 teaspoon garlic powder
  17. 1/4 teaspoon onion powder
  18. 1/4 teaspoon dried parsley flakes
Step 1
  1. In a large sauce pan heat 1 tablespoon of vegetable oil.
Step 2
  1. Saute the chicken gizzard in this heated oil for 4 to 5 minutes until cooked through.

  3. Remove the gizzards from the pan and then finely minced.
Step 4
  1. Combine the ground meat in a small bowl. Mix the meat together with your hands until it is well combined.
Step 5
  1. Add the bell pepper to the sauce pan and allow to sauce for 1 minute.
Step 6
  1. Add the ground meat mixture to the pan and cook until it's browned. Use a potato masher to smash the cooked meat mixture into very tiny pieces as it is browning.
Step 7
  1. Add waster and the broth to the pan. Immediately whisk in the cornstarch and the flour.
Step 8
  1. Add the remaining ingredients and allow to come to a boil.
Step 9
  1. Reduce the heat and simmer the grave for 30 to 35 minutes or until the mixture is thick.
