In the heat of Summer it is important to provide as many tasty ways to quench your thirst as possible. The honest truth of the matter is water is boring and Soda Pop can be too clingy sweet when you are trying to break Summer’s hold on your throat.
One of my favorite places discover fun, and tasty treats is Trader Joe’s. Luckily, Salt Lake County in Utah is home to one. Upon a more recent trip I found this amazing beverage:
Trader Joe’s Watermelon Cucumber Cooler. I loved it, however I felt that it needed a bit of carbonation or effervescence that Soda Pop add’s and in the proportion it’s not too sweet or clingy on the tongue. I prefer having the beverage chill for 24 hours, so it get’s that deep, deep chill. Once that has been established, it is the perfect accompaniment to any Summer feast!
Watermelon Cucumber Sparkler
- 1 cup water
- 1/2 cup sugar
- 1 cup fresh mint leaves
- 6 Cups cubed, seeded watermelon
- 1 Japanese cucumber (coarsely chopped)
- 1/4 cup fresh lemon juice
- 4 Cups chilled ginger ale (or sparkling wine)
|In a microwave-safe dish combine 1 cup water and the sugar. Microwave the sugar water on high power for 3 minutes or until the water boils, and the sugar has dissolved; stir. Add the mint; let steep for 30 minutes. Discard the mint. |
|Combine the watermelon and cucumber. In batches place the mixture in the blender with 1/2 cup cooled syrup; and puree for 2 minutes. Strain this mixture through a fine-mesh sieve into a picture. Repeat this process until all mixture has been processed. Stir in the lemon juice. Chill at least 1 hour, better if it is 2 plus hours. |
|Divide mixture evenly into 8 glasses; top each with 1/2 cup ginger ale or sparkling wine. Serve immediately. |
