If you are anything like me, Souvlaki has been on your culinary radar for quite some time.  It is that popular Greek fast food that consists of small pieces of meat and sometime vegetables grilled on a skewer.

I have eaten this tasty meat treat right off the stick with my hands (yes it was hot, no pain no gain right?) or in a pita with an awesome tatziki sauce, or I have had it on a dinner plate with lemon roasted potatoes or a fine rice pilaf!  The options are endless, however this is a fantastic recipe for spring and summer!

Souvlaki Marinade (Chicken, Beef, Pork and/or Lamb)

  • 4 lemons (quartered)
  • 2 lemons (juice of)
  • 1 cup white wine
  • 1/4 cup olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon oregano
  • 1/2 teaspoon rosemary
  • fresh ground black pepper (to taste)
  • 2 bay leaves
  • 2 Cloves garlic (crushed)


Step 1
Place all ingredients in a zip-type plastic bag
Step 2
Add two pounds of meat of choice cut into 2" cubes.
Step 3
Allow to refrigerate for up to 24 hours, turn occasionally to coat meat evenly.
