For those of us who garden, grow vegetables from our land – there is nothing better than the beet. Well, in my opinion – if you cook it correctly – these root vegetables can yeild some tasty alternatives to meat.

I know, crazy talk right? Your on a meat based website that is telling you that there are vegetables that belong on my table? Yes, I am. Roasted, salted and with the right herbs and a little goat cheese – these earthy treats will accompany your agrarian table.

Salted and Tinfoil Beets

Roasted Beets with Goat Cheese and Herbs

Cook time 1 hour, 5 minutes

  • 6 beets (1 1/2 lb total weight, greens removed)
  • 1 teaspoon thyme (fresh, chopped)
  • 1 teaspoon chives (fresh, chopped)
  • 2 Tablespoons extra virgin olive oil
  • kosher salt and fresh ground black pepper
  • 2oz goat cheese (fresh, crubled)


Step 1
Preheat oven to 400 degrees F.
Step 2
Wrap your beets individually in aluminum foil. Place in the oven and roast until the beets are fork tender when you pierce them with a fork. This should take about 1 hour depending on the size.
Step 3
Meanwhile, in a separate bowl mix the thyme, chives and oil. Set aside.
Step 4
Plate your beets and drizzle the olive oil-herb mixture over the beets - season with the salt and pepper and crumble the goat cheese on top.
Step 5
Serve immediately.
