The original version of this recipe came from Stillwater, Oklahoma original Eskimo Joe’s. Their Chipotle Bacon Burger is a 1/3 pound of ground chuck, seasoned and then grilled and topped with melted cheddar cheese, applewood smoked bacon and a smoky chipotle mayonnaise.

I try to respect the original and stay with applewood smoked bacon, ground chuck and highly suggest you use a cast iron skillet to achieve the same results!

Ingredients
  1. 1 cup mayo
  2. 1 - 2 chipotle peppers in adobo (finely minced - 1 for less punch and 2 for more zest)
  3. 2 garlic cloves, minced
  4. 1/2 teaspoon lime juice
  5. kosher salt and black pepper
Instructions
  1. Mix in a bowl by combining the mayo, pepper, garlic, salt, pepper and lime juice completely.

Chipotle Bacon Burgers

Ingredients
  1. 1 pound ground beef
  2. 3 shakes Worcestershire sauce
  3. 1/2 teaspoon chipotle powder
  4. kosher salt and black pepper
  5. chipotle spread
  6. 2 strips thick cut bacon (cooked)
  7. 2 red onions, grilled
  8. greens, Romaine or Arugula
  9. 4 slices cheese, pepper jack or sharp cheddar
Instructions
  1. In a bowl mix your beef, pepper, salt, Worcestershire and the chipotle powder. Mix until well incorporated.
  2. Use the chipotle spread mixture.
  3. When your grill is hot, grill your patties until you reach your desired doneness and top with your cheese and allow to melt.
  4. While you allow your burgers melt the cheese, spread the chipotle spread over the hamburger buns.
  5. Assemble your burgers and add additional chipotle spread as needed.
