Perfect Oven Fried Chicken

Ingredients

  • Olive Oil (Nonstick Cooking Spray)
  • 2 Large Eggs (Beaten)
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Honey
  • 1 Tablespoon Hot Sauce (Franks (you can spice it up by using Siraracha)
  • Kosher Salt & Fresh Ground Black Pepper
  • 2 1/2 Cups Panko Bread Crumbs
  • 2 Teaspoons Salt
  • 1/2 Teaspoon Ground Black Pepper
  • 1/2 Teaspoon Smoked Paprika
  • 1/4 Teaspoon Cayenne Pepper
  • 1/4 Teaspoon Garlic Powder
  • 1 3 LB Chicken (Cut into 8 pieces)

Directions

Step 1
Preheat your oven to 400 degrees F.
Step 2
Place a wire rack on a sheet tray and spray with the nonstick cooking spray.
Step 3
In a bowl, whisk your eggs, mustard, honey, hot sauce and salt and pepper together until thoroughly combined. Note: Salt and Pepper this is to taste - but don't taste raw egg because that's gross.
Step 4
In a separate bowl combine your dry ingredients panko 1/2 teaspoon ground black pepper, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper, 1/4 teaspoon garlic powder and whisk to combine.
Step 5
Dredge your chicken parts through the wet mixture first, then the dry and pat the breadcrumb mixture on so it adheres.
Step 6
Arrange on the wire rack lined sheet tray, space appropriate to allow sufficient space between each pice of chicken.
Step 7
Spritz your chicken with your non-stick cooking spray. This will help to brown and crisp up the coating - remember, it's olive oil.
Step 8
Once your oven is properly heated, place the sheet on the upper rack of the oven and bake the chicken until golden and crisp.
Step 9
Using an instant read thermometer - the chicken should be at 160 degrees F in the thickest part of the chicken. This should take about 45 minutes.
