Full Disclosure: Macayo’s Mexican Kitchen was one of our first places my wife Cindy and a bunch of Utah transplants ate at – when we transferred from Citibank SLC to Citibank Nevada. Paul Hess, Scott & Jill Tuttle, Cindy, Aleatha and I ate like kings. I miss those guys and I missed this food.
I moved to Las Vegas in 1998 and at that time we didn’t have our Son yet. That would take a move back to Utah and becoming foster parents to adopt that little guy. However, that is a different story. He (Connar) is the premise to why we came to Las Vegas, NV for a family vacation.
There were sights we wanted to show him: Where we lived, Where I worked – where his sister went to elementary school. Basically where we spent 4 years of our lives. We also wanted him to experience some of the food we experienced. Macayo’s Baja Sauce was just one of those experiences.
The Baja Sauce – one of the greatest sauces we had ever experienced. We now can make it in our own home. However, this culinarily was a starting point – and why I am sharing this with you. We normally don’t review chain restaurants. The Baja Sauce got this establishment on the board!
