Cilantro Lime Rice

I love rice. I love flavorful, tasty yet clean rice. Did I mention I love rice? Rice is an amazing vessel that you can pair with so many lovely dishes – and if your rice can stand on it’s own – it brings so much to the overall composed dish.

I have tried recipes – slow cooked, rice cooker – and this is my favorite method and favorite recipe. I have detailed the slow cook variety for those of us who are purists. However, if you wish to use a rice cooker adjust your liquid as follows: 1 & 1/4 cup liquid for 1 cup of rice. It’s that easy – follow the steps below. Enjoy!

Chipotle’s Cilantro Lime Rice


  • 1 cup long grain white rice (basmati)
  • 1 tablespoon canola oil
  • 2 Teaspoons cilantro (fresh, chopped fine)
  • 1 lime (juiced)
  • 1 teaspoon kosher salt
  • 2 Cups broth (chicken or vegetable)


Step 1
In a sauté pan - sauté the rice in the oil until it is almost translucent.
Step 2
Add the water, and bring to a boil.
Step 3
When the water starts to boil, reduce the heat to low.
Step 4
Simmer, covered for 15-20 minutes - or until all the water is absorbed.
Step 5
Turn off the heat. Do not peek or check for doneness. Leave it covered for 30 minutes - this will steam the rice. This will result in fluffy rice.
Step 6
After 30 minutes, remove the lid and allow some of the steam to escape. Transfer the rice to a large mixing bowl.
Step 7
In a separate mixing bowl combine your salt, the lime juice of the lime and until dissolved. Pour rover the rice and fluff with a fork.
Step 8
Sprinkle in the cilantro and toss to evenly distribute the cilantro and lime mixture.
