I am not really a breakfast person. However, my very favorite breakfast is Oatmeal Pancakes – something about their heartiness and a side of bacon speaks to me. This is the version that I like on Christmas Morning – or heck, any morning.
My family absolutely loves these pancakes. These pancakes are now our Saturday and Sunday staples. These pancakes are especially delicious when served with warm butter and maple syrup.

Oatmeal Pancakes

Ingredients
- 1/2 cup all-purpose flour
- 1/2 cup quick cooking oats
- 1 tablespoon white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cups buttermilk
- 1 teaspoon vanilla extract
- 2 Tablespoons vegetable oil
Instructions
- In a food processor place flour, oats, sugar, baking powder, baking soda, salt, buttermilk, vanilla, oil and egg. Puree until smooth.
- Heat your griddle and lightly oil the surface over medium heat. Pour or scoop the batter onto the griddle, using a 1/4 cup ladle for each pancake. Brown on both sides and serve hot with maple butter and syrup.
